We had fun. I arrived at Kelly’s early and helped cut up fruit and do a nice presention, it’s all about presentation LOL. Got everything set up and ready. Then it was 6:30 and we decided we were hungry and started eating! She made this taco soup:
Paula’s Taco Soup
2 lbs ground beef
2 cups diced onions
2 (15 ½-oz) cans pinto beans
1 (15 ½-oz) can red kidney beans
1 (15 ½-oz) can whole kernel corn, drained
1 (14 ½-oz) can Mexican style stewed tomatoes
1 (14 ½-oz) can diced tomatoes
1 (14 ½-oz) can tomatoes and green chilies
2 (4 5/8-oz) can black olives, drained and sliced
½ cup green olives, sliced (optional)
1 (1 ¼-oz) package taco seasoning mix
1 (1-oz) package ranch dressing mix
Corn chips, for serving
Sour cream, for garnish
Grated cheese, for garnish
Chopped green onions, for garnish
Sliced jalapenos, for garnish
Brown the ground beef and onions in a large skillet; drain off excess fat and transfer browned beef and onions to a large slow cooker or stockpot.
Add the beans, corn, tomatoes, green chilies, black olives, green olives, taco seasoning and ranch dressing mix.
Simmer over low heat for about 1 hour (or 6-8 hours on low setting in crock pot).
To serve, place a few corn chips in each bowl and ladle soup over them.
Top with sour cream, cheese, green onions, and jalapenos.
Yield: 12-16 servings
Time: 1 hour 15 minutes or 6-8 hours 15 minutes prep
It is amazingly good! I could have eaten the whole crockpot, that is how good it is! Then Lynn from church showed up and ate with us. Neither of us had met Lynn before. She was really nice, older than us, she has a 13 yo son. After that we started knitting. Well Kelly and Lynn started knitting and I started crocheting. Renee showed up and she is very funny. She doesn’t have any kids but they have a miniature dauschhund, so that is her baby. We would share stories of our kids and she would share stories of hers 😉 Then Mel showed up, that is Kelly’s sister and she just cracks me up. So funny, she and I could get into real trouble I think!
I stayed until 9:30 and then went to pick up Katie. I was so exhausted, but it turned out to be a longer night than I thought when I got home and turned on the computer to see “everything” that had gone on…

Ok, I guess I am not that coordinated, I tried one or the other, I think it was crocheting and could not get it. I tried a few times a week over the course of about 6 months and the pot holder I was attempting to make turned into a rectangle and not a very good one at that LOL!!
One of these days I will learn!!

I love soup! I make a few homemade kinds myself actually.
I jsut learned to knit this summer, but I stink at it still *rofl*
I started making a wash slocth and it is STILL only a 2 inch strip *LMBO*

Very cool abotu the knitting-Erik has started to knit, he has a knitting class at school-My mom has been helping him though because I have NO clue where to even start, rofl.
She (mom) made Abby 5 scarves that are all so adorable! She says her hands hurt really bad after a while though-

I’ve heard raving about taco soup but I have never tried it. Maybe I will finally give it a whirl!
I used to be able to crochet, my Grandma taught me when I was 12 or so. But I have done in in probable 15 years so I doubt I even could now. I want to learn to knit….seems like that’s what all cool kids are doing! LOL

It is very delish, and I’m a relatively picky eater, and I was eating it like I would never be able to eat food again LOL!
Did you use a crochet hook, or two needles?
I love to crochet, though I don’t follow any patterns, just make up my own thing and only know how to do single stitch. Thinking about learning something else to keep it interesting though LOL.

It is so good Renee, you have to try it! I’m such a picky eater but I loved it. I put a ton of cheese on (I love cheese LOL) and sour cream and I was in heaven!

Now if you want to learn how to crochet (read totally simple) then let me know! I’m your gal! (Of course I don’t read any patterns and I do just single crochet and I make it up as I go along, but that is besides the point LOL)

I never thought I would love taco soup, but it is really good!
I was a crocheter (is that a word) at the knitting party, because I dare to be different! Or it could be that just watching someone knit makes me cringe with our complicated it looks LOL!
Crocheting doesn’t make my hands hurt, with is kind of surpising to me.

It is incredibly good! Yeah, we just started it, and we are probably going to make it into a ministry where we do things for charity’s. Like the Linus Project that collects homemade blankets to give to sick children, baby-teenager.
You should totally start a cross stitch group! I haven’t done that in so long, I used to love it! I should pick it up again 🙂 ARe all of your threads still organized???

I always wanted to learn how to knit. I can sew, crochet…but not knit. I had a friend offer to teach me and then she moved to Illinois. 😦 SOunds like fun!

OMG, tons of cheese & sour cream – I’m all over it. I am a cheese freak!!! I buy those bags of cubed cheese or just blocks and sit and eat it. Have you ever tried Amish farmer’s cheese? It is to-die-for – when you come through PA I’ll have to deliver you some 😀 I’m like that with bread too. I can just sit and eat bread (or flour tortillas) like it’s a snack. I have to run just to maintain my weight – I’ll never lose LOL. I am making a grocery list for Robert – he’s going shopping for me tomorrow. I will definitely be getting ingredients to make it this weekend. I’ll let you know if it’s love 😉

Dude, I totally love cheese! That is why I love making homemade mac and cheese! I seriously put in 8-9 cups of cheese LOL! I’ve never had Amish farmer’s cheese, can’t wait to try it!!! I could eat a whole loaf of french bread!! Yum..
Brian and I were talking about starting up exercising. I don’t know what we are going to do, but it has to be something!
